The aim of the project is to investigate whether AI-driven protein design using, among other things, AlphaFold can enable the development of living filters that replace pasteurisation in the production of non-alcoholic beverages. We want to identify both technical and commercial opportunities to create a more sustainable and accessible method of quality control in the beverage industry with a better outcome.
